Apple and Fennel Salad

Ingredients:

  • 5 ounces of fresh spinach
  • 1 small sliced fennel head
  • 2 medium Granny Smith apples
  • 1 small sliced red onion
  • Celery seed dressing

Preparation:

  1. Peel and cube apples.
  2. Thoroughly wash spinach, removing fibrous stems.
  3. Dry and place in salad bowl.
  4. Add fennel, apples and onions.
  5. Toss with celery seed dressing.
  6. Trim with fennel tops.

Yield:

4 servings
