Sriracha Queso Dip

A delicious bowl of queso dip served with crispy tortilla chips.

Ingredients:

  • 2 Tbsp butter
  • 1 tsp minced garlic
  • 2 Tbsp flour
  • 1 cup milk
  • 8 oz shredded cheese (monterey jack & colby or similar)
  • 2 Tbsp sriracha sauce
  • 2 scallions

Instructions:

  1. Heat butter over medium heat in a medium saucepan. Add garlic and cook 1 minute. Whisk in flour. Continue to whisk and cook 1 minute.
  2. Slowly stir in milk. Allow to cook 3-4 minutes, just until thickening, stirring occasionally. Remove mixture from heat and stir in cheese. Stir until smooth and then stir in the sriracha.
  3. Serve immediately or pour into a small slow cooker, set to warm to keep until serving. Garnish with chopped scallions and if desired, a few extra drops of sriracha.
